What’s Cooking Wednesday: Marinated Fresh Tomatoes
INGREDIENTS
- 3 medium tomatoes
- 1 sweet green pepper
- 2 green onions
- 2 tablespoons salad oil
- 3 tablespoons tarragon vinegar
- ½ teaspoon salt
- ½ teaspoon oregano
- ¼ teaspoon celery seed
INSTRUCTIONS
- Slice tomatoes and cut the green pepper into thin rings.
- Arrange in a bowl and sprinkle green onions on top.
- Combine the rest of the ingredients in a jar and shake thoroughly.
- Pour over vegetables.
- Store in refrigerator for at least 1 hour.
