What’s Cooking Wednesday: Marinated Fresh Tomatoes

INGREDIENTS

  • 3 medium tomatoes
  • 1 sweet green pepper
  • 2 green onions
  • 2 tablespoons salad oil
  • 3 tablespoons tarragon vinegar
  • ½ teaspoon salt
  • ½ teaspoon oregano
  • ¼ teaspoon celery seed

INSTRUCTIONS

  1. Slice tomatoes and cut the green pepper into thin rings.
  2. Arrange in a bowl and sprinkle green onions on top.
  3. Combine the rest of the ingredients in a jar and shake thoroughly.
  4. Pour over vegetables.
  5. Store in refrigerator for at least 1 hour.
